I Think I Can…I Know I Can

It’s Monday already! Well, actually it’s my Wednesday today since I had Thursday and Friday off. I feel like time has been going by way to quick. Every day off I have involves running around trying to get everything done. I definitely have way more responsibilities and things to worry about now that I’m working in town. But that’s okay, it still leaves me time for myself. On Friday I did a little running around, then I went to get a pedicure. I haven’t had one in a long time, so it seemed like the perfect way to relax. I think it’s good to treat yourself. I’m definitely looking forward to my next vacation!

On Wednesday I went trail running with my friend from work. I haven’t done a ton of running, let alone trail running, so I had no idea what I facing up against. Cardio for me isn’t always fun. There’s nothing I hate more than staring at the same spot on the wall or constantly looking at the time while running on a treadmill. That’s why I really have been trying to improve on my outdoor running skills. It’s much nicer to look at different scenery and breath in fresh air.

We went out to the Otway Nordic Centre, which is a cross-country ski place in the winter. It’s full of trails! We were four of us; myself, Kari, another girl and a 72-year-old man who organizes the run 3 times a week. I’m not going to lie, he could outrun me any day. We ended up running 8 km all together, a lot of which was uphill. Those part’s killed me, especially near the end. I kept wanting to give up, and I would tell myself “No, you can do this!” Kari said I did pretty well for my first time. I felt pretty drained, but the next day I felt so good I wanted to do it again. I’m going to try and make it as much as I can and see how much I improve. Summer is nearly here, so I don’t want to spend all my workout time inside in a smelly gym.

After running with someone nearly triple my age and starting my course on aging, it has really made me think about how I want to age and the shape I’d like to be in when I’m 25. The book I’m reading right now is so interesting, I had to force myself to stop reading to write this blog. The decisions we make each day shape who we will be in the future. I don’t want to have a chronic disease or be stuck eating bland, baby-like food in a nursing home; I want to run, cook amazing food, travel and be able to enjoy life to the fullest in 50 years from now.

Does anyone have any advice for beginner runners? The thing that kills me the most is my lungs, not my legs. I’m thinking maybe I need to work on my breathing.

First Run of the Season

Looks like the weather is in my favour! Tuesday afternoon when I got off work, I debated whether I should go to the gym, or go out for a run. I absolutely hate running in the cold – my ears get cold (and sore) and my lungs burn! The last few days have been absolutely gorgeous. I almost think I was over dressed as I had my Smart Wool long sleeve shirt on over top my tank. Considering it was my first run outside (running on a treadmill does not match up to outside even with an incline), I thought I did pretty good. It`s not my legs that kill me, it`s my lungs. Good thing those cycle fit classes I`ve been going to have kept me in shape.

A couple things I`ve been loving lately are homemade granola with Greek or goat`s yogurt and fresh juices. I love how I feel after having a fresh juice. One of my favourites is beets, carrots, apple, lemon and kale.

Whole Wheat Honey Banana Muffins

Good morning! It’s the weekend! As I said in my last post, I haven’t worked Monday to Friday in years, so it’s a little different for me.

This morning I’m going to a boot camp class at the YMCA. I recently got a membership there, so I want to try a bunch of their classes. Besides that, I have a little running around to do and should probably get some homework done. Oh, and I also want to make something delicious for dinner – but I haven’t thought that far ahead yet.

As I mentioned in yesterday’s post, I was going to give you the recipe for the muffins I made. I really wanted a healthy muffin I could bring to work. I was going to add nuts and maybe a few other things to them, but I was craving a simple banana muffin.

I looked for many recipes, but this is the one I decided to try. It’s great when you find a recipe that you like (and works), because then you can play around with it a little.

Whole Wheat Honey Banana Muffins

Ingredients:

1 3/4 cup whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
1/3 cup olive oil
1/2 cup honey
2 eggs
2 bananas, mashed
1/4 cup hot water
 

1. Preheat oven to 325 degrees and lightly grease the muffin pan (I skipped this step, but then my muffins were a little difficult to get out. I have a silicone pan that I don’t normally need to grease)

2. Mix the flour, baking soda and salt in a bowl and set aside.

3. In a larger bowl, whisk the olive oil and honey together. Once well mixed, add the eggs and stir until just combined.

4. Mix in your mashed banana.

5. Alternate the dry ingredients and hot water, adding them to your wet mix. Make sure not to over mix, only until combined.

6. Pour mix into muffin pans (I filled them until just below the top). Bake in oven for 15-20 minutes. Mine took about 20, but it depends on your oven.

I just might have to do a little baking today too. I used to want to decorate wedding cakes and be a super-star pastry chef, then I decided to take the cooking direction.

Day 15 – Happy Friday!

Hey! Happy Friday! It’s an actual Friday for me. For the first time in years, I worked 40 hours, Monday-Friday. It’s not going to be like that all the time, as I am training, but it sure is weird! So far it’s going great. Not being stranded in the middle of nowhere with little internet and horrible food is sure nice. The only difficult part is that Josh is back at work for 2 weeks. So far the internet on his end has given us a little time for Skype.

Wednesday night I made muffins to take in my lunch. I will post the recipe tomorrow. Then last night I made Braised Chicken with Mushrooms, along with a delicious Ratatouille (I made extra to take in my lunch too). Recipes to come!

Yesterday I worked from 6:30-2:30. I knew there was no way I would want to go to the gym after work, so I forced myself to get out of bed at 4:30 and go from 5-6 before work. It was definitely hard waking up, but once I was there I felt much better. I did take a little nap after work though!

Banana Dream Smoothie

Hello! Hope your day is going great so far. Yesterday we went for a session with the personal trainer. I can’t even tell you how sore I already was from snowboarding the day before! I sucked it up and pushed myself to make the best of the workout. My new workout rocks – I’m on my way to doing 30 push-ups! If you’re in the Prince George area you should definitely check out Kris at On the Move Fitness. He can make all kinds of different fitness plans for you.

In the afternoon, we went to Josh’s grandparents for dinner. They have a hobby farm where they take care of their own animals (pigs, chickens, goats, and cows) and grow their own vegetables. Everything is natural and raised with love. We usually go there for dinner then play board games afterwards.

Today I’m going to the gym and getting some cleaning/organizing done around the house. I’m also going to make dinner and maybe even the apple crisp Josh has been bugging me for.

I have had a smoothie similar to this before, but apparently it’s been a while. I made this for breakfast and it was gone quicker than it took to make it. The most amazing ingredient combination ever: chocolate, peanut butter and banana. Heaven.

Banana Dream Smoothie

1 cup almond milk
3 frozen banana halves
1 tbsp. peanut butter
2 tsp. cacao powder
2 scoops Vi Shape Shake Mix (or other vanilla protein powder)
A few ice cubes if you like them cold and refreshing
 
  1. Blend all ingredients and enjoy.

I also made this berry one for Josh.

And this is Sunday night’s dinner. Maple glazed salmon with lemon scented rice and veggies. Simple, but delicious and healthy!

It`s Official!

Hello! Guess what!?!? We’re going officially going to Jamaica for 2 weeks next month! We finally made the decision. There were other places available for the dates we wanted, but they were quieter (more boring) areas that didn’t have the adventure feel we wanted. We wanted to go somewhere that had more to offer than sitting around the resort. We’ll be staying in Ocho Rios and there is plenty to do there. We’ll be going zip-lining, hiking up falls, visiting different beaches, tubing down a river, kayaking, windsurfing and much more. The trip is all inclusive, so we just have to pay for some of the extra excursions. I can’t even tell you how excited I am! Don’t worry I’ll take a lot of pictures.

I’ve finally gotten some cooking done. The other day I made a big batch of quinoa salad. I didn’t exactly follow a recipe – I just kind of threw it together. It turned out pretty darn delicious. I even had a couple people have a bowl and give me feedback. My only complaint was that I could have used a little less garlic. I could taste it in my mouth for a while. I loaded it with veggies, a lemon vinaigrette, then topped it with homemade candied walnuts and goats cheese. Yum!

Candied Walnuts or Pecans

1.5 cups walnuts or pecans
1 cup sugar
1 cup water
1/4 cup maple syrup
 
1. Heat oven to 350C. Whisk water and sugar together, then bring to a simmer. Remove from heat and whisk in maple syrup. 
2. Stir in nuts and stir to evenly coat. Strain extra liquid and lay on baking pan.
3. Bake for 20 minutes stirring occasionally. It may take a bit longer (or less) depending on the oven. The mixture will start to stick to the nuts. Let cool completely before using.

I also made butter chicken and naan bread from scratch. It’s one of my favourite Indian dishes that I’ve been wanting to make for a while. We had Josh’s sister and her boyfriend over for dinner and they thought it was delicious. Next time I might make it a bit spicier.

Josh made a roast in the slow cooker yesterday. I chopped the vegetables for him, but he did everything else. It smelt absolutely delicious in the house all day.  I made sure to load it up with lots of veggies!

I’m not sure what the weather is like where everyone else is, but it’s been warmer than usual here. It’s been above zero which has left the roads sloppy and the snow melting. Some of you might be happy about this, but I`m not impressed. It means bad snowboarding and sledding conditions. We managed to get some skating in last night. I`m not the most athletically talented person, but I always try. It was fun shooting the puck around and getting some exercise. We also went to the gym and pool yesterday, so I`m feeling super today!

Well that`s all for today. We`re eating left overs tonight then heading out for a snowmobile ride. We`re going to pull each other on the snowboard! This weekend my plans so far include snowboarding, poker night, ice fishing and maybe some shooting. I also need to get organized for the trip since we have to leave to go back to work on Tuesday. Cooking and Relaxing

Hey guys! How was everyone’s weekend? Mine was great, but it went buy very quick. We’ve already been off for five days, but it feels like two or three. I`m also finally on a regular sleep schedule as it took me a while to adjust after getting off night shift. Saturday we went to visit Josh`s grandparents. They have a hobby farm where they have cows, pigs, chickens, goats, and a horse. They also have a vegetable and berry garden. I think it`s awesome that they live off the land as much as possible. They know and have control of what goes into their food. I always enjoy going to visit them, especially for dinner.

Besides that we have been visiting friends and relaxing. Yesterday I managed to do a little Christmas shopping and bought myself a few things too. I got some cookie cutters, a pastry bag and tip kit, and some cute cupcake liners. I walked around the kitchen store and wanted nearly everything off the shelves in my kitchen. But, I was a good girl and only got a few things. Maybe Santa will be good to me this year.

 

 

Saturday night I made Sun-dried Tomato and Spinach Pasta with Pesto Chicken. I was pretty happy with how it turned out. I didn’t have a plan or recipe, I just went to the store and started putting things in the cart. I served it with some fresh parmesan cheese, basil and homemade garlic toast. I`m bad at writing down my recipes so I will have to post it on my next one. It’s definitely a dish worth trying!

 

 

Sunday we went to the craft fair at the Civic Centre. There was a lot of cool things there, but I was more interested in the food. We bought some fresh fudge and I got some different jellies to send my mom for Christmas. I`m pretty sure I tried almost every sample at the food stands. In the afternoon I baked some brownies and homemade clam chowder. They both turned out really good. That night I made maple glazed salmon with asparagus and a lemon scented risotto. I`ve made risotto many times between school and working in a resort, however, I screwed this one up. I was upset about it at the time because I wanted everything to turn out perfect and I also hate making mistakes. It ended up really thick and had a gluey kind of texture. I asked someone and they said I should have thinned it out with some stock. I guess I will just have to try again! I guess everyone makes mistakes and we have to learn from them. It must be the stubborn French side in me that gets really discouraged about it.

My personal training session on Friday went really well. I was sore for two days! My goals were to increase my cardio, strength and stability as well as tone and maintain my weight. I went again today and I think it hit me harder than the first day. He gave me another routine to do. Nearly everything he has me doing is working out my whole body. I`m hoping to workout 3-4 times a week. I don`t want to aim too high right now, but on days that I don`t go I`d like to do yoga or something active outside. In the winter I`m always outside between snowboarding, snowshoeing or ice fishing.

Well, that`s an update of my days off. I`ll get that pasta recipe up for you as soon as I can. I have to get a couple solid hours of homework done this afternoon. I always end up choosing blogging over homework. It`s more fun and I`m trying to avoid biology. This is my last science course, then the rest of them will be more fun.
