I Think I Can…I Know I Can


It’s Monday already! Well, actually it’s my Wednesday today since I had Thursday and Friday off. I feel like time has been going by way to quick. Every day off I have involves running around trying to get everything done. I definitely have way more responsibilities and things to worry about now that I’m working in town. But that’s okay, it still leaves me time for myself. On Friday I did a little running around, then I went to get a pedicure. I haven’t had one in a long time, so it seemed like the perfect way to relax. I think it’s good to treat yourself. I’m definitely looking forward to my next vacation!

On Wednesday I went trail running with my friend from work. I haven’t done a ton of running, let alone trail running, so I had no idea what I facing up against. Cardio for me isn’t always fun. There’s nothing I hate more than staring at the same spot on the wall or constantly looking at the time while running on a treadmill. That’s why I really have been trying to improve on my outdoor running skills. It’s much nicer to look at different scenery and breath in fresh air.

We went out to the Otway Nordic Centre, which is a cross-country ski place in the winter. It’s full of trails! We were four of us; myself, Kari, another girl and a 72-year-old man who organizes the run 3 times a week. I’m not going to lie, he could outrun me any day. We ended up running 8 km all together, a lot of which was uphill. Those part’s killed me, especially near the end. I kept wanting to give up, and I would tell myself “No, you can do this!” Kari said I did pretty well for my first time. I felt pretty drained, but the next day I felt so good I wanted to do it again. I’m going to try and make it as much as I can and see how much I improve. Summer is nearly here, so I don’t want to spend all my workout time inside in a smelly gym.

After running with someone nearly triple my age and starting my course on aging, it has really made me think about how I want to age and the shape I’d like to be in when I’m 25. The book I’m reading right now is so interesting, I had to force myself to stop reading to write this blog. The decisions we make each day shape who we will be in the future. I don’t want to have a chronic disease or be stuck eating bland, baby-like food in a nursing home; I want to run, cook amazing food, travel and be able to enjoy life to the fullest in 50 years from now.


Does anyone have any advice for beginner runners? The thing that kills me the most is my lungs, not my legs. I’m thinking maybe I need to work on my breathing.

Great News

Hello everyone! Happy long weekend! Life has been so hectic lately. I’m not sure if I mentioned this, but Josh and I are buying a house, and it will be official on May 30! We’re so excited. There’s a lot of renovations we want to do, but it will be a whole new adventure. Between working, getting things organized and all of the appointments, I’ve been one busy woman. I had no idea there were so many steps to buying a house!

Josh’s brother and girlfriend were also in town with our baby niece Hannah at the beginning of the month too. It was so nice to finally meet her. She’s got the cutest smile and beautiful eyes. It was sad when they left.


My sister gave birth to her baby girl on Mother’s Day! Her name is Kylee and I can’t wait to meet her. It’s so hard being so far away and I won’t be able to visit until August. Luckily my mom and her send me tons of videos and pictures. She’s adorable!



I can’t wait to spoil her when I visit. I’ve already been doing some online baby shopping.

This morning I finally used the spa package that Josh got me for Christmas. It included infrared sauna, body scrub. body wrap and a facial. My skin feels so soft and I feel so relaxed!

Well hopefully I have more time for blogging now that everything is getting more organized. I’ve also been taking advantage of the nice weather as much as possible. Except today, because it’s raining! Hope you’re having a great long weekend!

Day 15 – Happy Friday!

Hey! Happy Friday! It’s an actual Friday for me. For the first time in years, I worked 40 hours, Monday-Friday. It’s not going to be like that all the time, as I am training, but it sure is weird! So far it’s going great. Not being stranded in the middle of nowhere with little internet and horrible food is sure nice. The only difficult part is that Josh is back at work for 2 weeks. So far the internet on his end has given us a little time for Skype.

Wednesday night I made muffins to take in my lunch. I will post the recipe tomorrow. Then last night I made Braised Chicken with Mushrooms, along with a delicious Ratatouille (I made extra to take in my lunch too). Recipes to come!

Yesterday I worked from 6:30-2:30. I knew there was no way I would want to go to the gym after work, so I forced myself to get out of bed at 4:30 and go from 5-6 before work. It was definitely hard waking up, but once I was there I felt much better. I did take a little nap after work though!

First Video

Hey everyone! I’ve finally gotten enough courage to film my first video. I’m not going to lie, it took many tries and I finally decided to just post it. They will only get better as I get more comfortable.

A Night of Relaxation

Good morning! We’re almost at the end of the week already. Yesterday I went to the gym, did a little cleaning, then sat back and relaxed while Josh made me dinner. Yes – I got to be the one relaxing! The only thing I did for him was make homemade pasta. This is white pasta, but next time I’m going to make whole wheat, which is something I haven’t done before.

I really want the attachment for my kitchen aid mixer, then I don’t have to hand crank it, and I can make even more different types (and shapes).

I have to say I couldn’t even believe what he decided to make me. I must have taught him something because it’s definitely the best meal he’s ever cooked (that I’ve seen). I thought he was pretty good before, but I was very impressed. Usually it’s slow cooker roasts, chili’s or BBQ steak.

First he brought out a balsamic and olive oil dip with bread.

Then the first course he had veggies with these huge lime-garlic prawns that were cooked perfectly!

For the main course he made a creamy tomato sauce for the pasta and topped it with seared scallops. It was sooooooo good!!

I’m going to add in that he also picked up a great bottle of wine.

I know – I’m spoiled. I do the cooking 90% of the time, but it is sure nice to be pampered like that sometimes! Even though some of this meal wasn’t exactly food I planned on eating on my 90 Day Challenge, you can’t say no when someone (especially your boyfriend) is cooking it for you. He also bought a mini cheesecake for us to share for dessert. I was in heaven!

Today we’re going snowshoeing to the old gun range. That will be my exercise for today. It’s been snowing since last night, so that means snowboarding this weekend! Have an awesome day!

Maple Cinnamon Almond Butter

Happy Monday! How was your weekend? Mine was a lot of fun! Saturday I went out for a little adventure in the middle of nowhere, and did some relaxing. Yesterday Josh and I went snowboarding at Purden Mountain. It was my first time going in 4 years! I wasn’t very good then either. My stomach was turning on our way there. I’m like that – I psyche myself out right before and get afraid. I signed up for lessons because a “ski hill” in Ontario is nothing compared to the mountains in BC. Besides, I really needed a refresher. I’m clumsy, but I try.

The instructor helped a lot. He taught me for about 2 hours and then I was on my own. I stuck to the smaller hill until the last run. He made me go down a big one! I was doing way better than I thought, but on that last run, my body was done. I was soooo sore from falling and giving my body a beating. It didn’t help that I was breaking in brand new snowboard boots either. I can’t even tell you how amazing it felt to take them off. I think we’re going to go again next weekend, so I’m ready to improve even more!

Now, on to the recipe I promised you:

Maple Cinnamon Almond Butter

I finally got to use my food processor, so I was pretty excited!

2 cup almonds
2 tbsp. maple syrup
1 tbsp. chia seeds
1 tsp. cinnamon
  1. Put almonds in food processor and continue processing until nice and smooth. It will take a while, maybe even up to 15 minutes. Every few minutes scrape down the bowl. Remember, patience is key!!
  2. Once nearly finished, add the maple syrup, cinnamon and chia seeds. It might not be as smooth once you add these, so continue processing for a few minutes
  3. Enjoy! I love it on toast, muffins or with sliced apples.

That’s all for today! I have an appointment with the personal trainer to get a new plan around noon. It will be the perfect addition to my 90 Day Challenge. I’m not going to lie, I’m a little sore from snowboarding yesterday, so let’s see how this goes. I might not be able to move by the end of the day! Have an awesome Monday!

It`s Official!

Hello! Guess what!?!? We’re going officially going to Jamaica for 2 weeks next month! We finally made the decision. There were other places available for the dates we wanted, but they were quieter (more boring) areas that didn’t have the adventure feel we wanted. We wanted to go somewhere that had more to offer than sitting around the resort. We’ll be staying in Ocho Rios and there is plenty to do there. We’ll be going zip-lining, hiking up falls, visiting different beaches, tubing down a river, kayaking, windsurfing and much more. The trip is all inclusive, so we just have to pay for some of the extra excursions. I can’t even tell you how excited I am! Don’t worry I’ll take a lot of pictures.

I’ve finally gotten some cooking done. The other day I made a big batch of quinoa salad. I didn’t exactly follow a recipe – I just kind of threw it together. It turned out pretty darn delicious. I even had a couple people have a bowl and give me feedback. My only complaint was that I could have used a little less garlic. I could taste it in my mouth for a while. I loaded it with veggies, a lemon vinaigrette, then topped it with homemade candied walnuts and goats cheese. Yum!

Candied Walnuts or Pecans

1.5 cups walnuts or pecans
1 cup sugar
1 cup water
1/4 cup maple syrup
1. Heat oven to 350C. Whisk water and sugar together, then bring to a simmer. Remove from heat and whisk in maple syrup. 
2. Stir in nuts and stir to evenly coat. Strain extra liquid and lay on baking pan.
3. Bake for 20 minutes stirring occasionally. It may take a bit longer (or less) depending on the oven. The mixture will start to stick to the nuts. Let cool completely before using.


I also made butter chicken and naan bread from scratch. It’s one of my favourite Indian dishes that I’ve been wanting to make for a while. We had Josh’s sister and her boyfriend over for dinner and they thought it was delicious. Next time I might make it a bit spicier.


Josh made a roast in the slow cooker yesterday. I chopped the vegetables for him, but he did everything else. It smelt absolutely delicious in the house all day.  I made sure to load it up with lots of veggies!


I’m not sure what the weather is like where everyone else is, but it’s been warmer than usual here. It’s been above zero which has left the roads sloppy and the snow melting. Some of you might be happy about this, but I`m not impressed. It means bad snowboarding and sledding conditions. We managed to get some skating in last night. I`m not the most athletically talented person, but I always try. It was fun shooting the puck around and getting some exercise. We also went to the gym and pool yesterday, so I`m feeling super today!


Well that`s all for today. We`re eating left overs tonight then heading out for a snowmobile ride. We`re going to pull each other on the snowboard! This weekend my plans so far include snowboarding, poker night, ice fishing and maybe some shooting. I also need to get organized for the trip since we have to leave to go back to work on Tuesday.
