It’s Monday already! Well, actually it’s my Wednesday today since I had Thursday and Friday off. I feel like time has been going by way to quick. Every day off I have involves running around trying to get everything done. I definitely have way more responsibilities and things to worry about now that I’m working in town. But that’s okay, it still leaves me time for myself. On Friday I did a little running around, then I went to get a pedicure. I haven’t had one in a long time, so it seemed like the perfect way to relax. I think it’s good to treat yourself. I’m definitely looking forward to my next vacation!
On Wednesday I went trail running with my friend from work. I haven’t done a ton of running, let alone trail running, so I had no idea what I facing up against. Cardio for me isn’t always fun. There’s nothing I hate more than staring at the same spot on the wall or constantly looking at the time while running on a treadmill. That’s why I really have been trying to improve on my outdoor running skills. It’s much nicer to look at different scenery and breath in fresh air.
We went out to the Otway Nordic Centre, which is a cross-country ski place in the winter. It’s full of trails! We were four of us; myself, Kari, another girl and a 72-year-old man who organizes the run 3 times a week. I’m not going to lie, he could outrun me any day. We ended up running 8 km all together, a lot of which was uphill. Those part’s killed me, especially near the end. I kept wanting to give up, and I would tell myself “No, you can do this!” Kari said I did pretty well for my first time. I felt pretty drained, but the next day I felt so good I wanted to do it again. I’m going to try and make it as much as I can and see how much I improve. Summer is nearly here, so I don’t want to spend all my workout time inside in a smelly gym.
After running with someone nearly triple my age and starting my course on aging, it has really made me think about how I want to age and the shape I’d like to be in when I’m 25. The book I’m reading right now is so interesting, I had to force myself to stop reading to write this blog. The decisions we make each day shape who we will be in the future. I don’t want to have a chronic disease or be stuck eating bland, baby-like food in a nursing home; I want to run, cook amazing food, travel and be able to enjoy life to the fullest in 50 years from now.
Does anyone have any advice for beginner runners? The thing that kills me the most is my lungs, not my legs. I’m thinking maybe I need to work on my breathing.

Hello everyone! Happy long weekend! Life has been so hectic lately. I’m not sure if I mentioned this, but Josh and I are buying a house, and it will be official on May 30! We’re so excited. There’s a lot of renovations we want to do, but it will be a whole new adventure. Between working, getting things organized and all of the appointments, I’ve been one busy woman. I had no idea there were so many steps to buying a house!
Josh’s brother and girlfriend were also in town with our baby niece Hannah at the beginning of the month too. It was so nice to finally meet her. She’s got the cutest smile and beautiful eyes. It was sad when they left.
My sister gave birth to her baby girl on Mother’s Day! Her name is Kylee and I can’t wait to meet her. It’s so hard being so far away and I won’t be able to visit until August. Luckily my mom and her send me tons of videos and pictures. She’s adorable!
I can’t wait to spoil her when I visit. I’ve already been doing some online baby shopping.
This morning I finally used the spa package that Josh got me for Christmas. It included infrared sauna, body scrub. body wrap and a facial. My skin feels so soft and I feel so relaxed!
Well hopefully I have more time for blogging now that everything is getting more organized. I’ve also been taking advantage of the nice weather as much as possible. Except today, because it’s raining! Hope you’re having a great long weekend!

Looks like the weather is in my favour! Tuesday afternoon when I got off work, I debated whether I should go to the gym, or go out for a run. I absolutely hate running in the cold – my ears get cold (and sore) and my lungs burn! The last few days have been absolutely gorgeous. I almost think I was over dressed as I had my Smart Wool long sleeve shirt on over top my tank. Considering it was my first run outside (running on a treadmill does not match up to outside even with an incline), I thought I did pretty good. It`s not my legs that kill me, it`s my lungs. Good thing those cycle fit classes I`ve been going to have kept me in shape.
A couple things I`ve been loving lately are homemade granola with Greek or goat`s yogurt and fresh juices. I love how I feel after having a fresh juice. One of my favourites is beets, carrots, apple, lemon and kale.
Well that`s all for today! I`m off to a cycle fit class before I head to work. I`m looking forward to my days off to do some recipe testing (which means recipes posted for you)! Have a good one!

Hey! Happy Wednesday! The week is already going by quick. My weekend was very relaxing. I visited family and did some cooking (of course). As I mentioned, it’s sooooo nice to be able to eat healthy and cook my own meals. I don’t regret my decision to change jobs one bit. And, 6 more sleeps until Josh is home already!
I’ve been going to the gym as much as possible. I took Sunday off to relax. I feel myself getting stronger and more toned, so hopefully I will be ready to reach my goal of 10 successful push-ups by March 3rd. This week I’ve been working 7-3, so I’ve been getting up at 5:00 am and going from 5:30-6:30 before work. It gives me energy at work and then I can relax and get other things done afterwards. Today is Day 20 of my 90 day challenge and I’m feeling amazing!
Sunday night I made something new. I’ve seen this recipe before and have been wanting to try it for a while. Lentil, Mushroom and Sweet Potato Shepard’s Pie. I found the recipe from this site. Josh’s Mom was a little skeptical about it as it’s not a traditional Shepard’s pie, but to her surprise, it was delicious! She even had seconds. I made mini pies to bring in my lunch too. I even had someone at work ask me for the recipe. This is definitely a recipe I recommend you try.
Something I found interesting about this recipe is that steel cut oats is one of the ingredients. It helps bind the first layer together and gives it even more nutrients. This recipe is packed with flavour and it’s good for you. The only thing I changed is that I put 2 cloves of garlic instead of one.

Hey everyone! I’ve finally gotten enough courage to film my first video. I’m not going to lie, it took many tries and I finally decided to just post it. They will only get better as I get more comfortable.

Hello! Guess what!?!? We’re going officially going to Jamaica for 2 weeks next month! We finally made the decision. There were other places available for the dates we wanted, but they were quieter (more boring) areas that didn’t have the adventure feel we wanted. We wanted to go somewhere that had more to offer than sitting around the resort. We’ll be staying in Ocho Rios and there is plenty to do there. We’ll be going zip-lining, hiking up falls, visiting different beaches, tubing down a river, kayaking, windsurfing and much more. The trip is all inclusive, so we just have to pay for some of the extra excursions. I can’t even tell you how excited I am! Don’t worry I’ll take a lot of pictures.
I’ve finally gotten some cooking done. The other day I made a big batch of quinoa salad. I didn’t exactly follow a recipe – I just kind of threw it together. It turned out pretty darn delicious. I even had a couple people have a bowl and give me feedback. My only complaint was that I could have used a little less garlic. I could taste it in my mouth for a while. I loaded it with veggies, a lemon vinaigrette, then topped it with homemade candied walnuts and goats cheese. Yum!
Candied Walnuts or Pecans
1.5 cups walnuts or pecans
1 cup sugar
1 cup water
1/4 cup maple syrup
1. Heat oven to 350C. Whisk water and sugar together, then bring to a simmer. Remove from heat and whisk in maple syrup.
2. Stir in nuts and stir to evenly coat. Strain extra liquid and lay on baking pan.
3. Bake for 20 minutes stirring occasionally. It may take a bit longer (or less) depending on the oven. The mixture will start to stick to the nuts. Let cool completely before using.
I also made butter chicken and naan bread from scratch. It’s one of my favourite Indian dishes that I’ve been wanting to make for a while. We had Josh’s sister and her boyfriend over for dinner and they thought it was delicious. Next time I might make it a bit spicier.
Josh made a roast in the slow cooker yesterday. I chopped the vegetables for him, but he did everything else. It smelt absolutely delicious in the house all day. I made sure to load it up with lots of veggies!
I’m not sure what the weather is like where everyone else is, but it’s been warmer than usual here. It’s been above zero which has left the roads sloppy and the snow melting. Some of you might be happy about this, but I`m not impressed. It means bad snowboarding and sledding conditions. We managed to get some skating in last night. I`m not the most athletically talented person, but I always try. It was fun shooting the puck around and getting some exercise. We also went to the gym and pool yesterday, so I`m feeling super today!
Well that`s all for today. We`re eating left overs tonight then heading out for a snowmobile ride. We`re going to pull each other on the snowboard! This weekend my plans so far include snowboarding, poker night, ice fishing and maybe some shooting. I also need to get organized for the trip since we have to leave to go back to work on Tuesday. Hey guys! Happy New Year! How were your holidays? Mine were a little hectic being that we had to work an extra week, then we were left with 5 days to do our Christmas shopping, visiting, relaxing and Kori’s baptism. I don’t even think I opened my laptop once! We had to come back to work on Boxing Day – I wasn’t a happy camper that’s for sure. Even though we weren’t home for that long, we still had a wonderful time. Our second day home we went snowshoeing to find a Christmas tree. I think we found a pretty awesome one (we did have to do some trimming, but hey, at least it wasn’t a Charlie Brown tree). We snowshoed about 1.5 km to find it and carried it back on our shoulders. That was definitely a workout!!
On the 23rd it was Kori’s (our niece) Baptism. She was great through the whole thing – she didn’t even cry! Christmas Eve we went to Josh’s cousin’s for some appys and drinks. Christmas Day we opened presents with his mom, then went to visit his Grandparents. After that we went to his sisters for more present opening and dinner. For dinner this year, we had steak and king crab. I don’t think it could have gotten much better than that. Josh and I bought AAA tenderlion steak. Normally, I’ll eat half a steak, but I ate every last bite of this suculent and delicious bad boy. I don’t even think I ate dessert (there was no room in my belly and I was satisfied enough).
I didn’t get a chance to do a lot of cooking on days off as we were running around and had dinner with other people. However, I did do a little Christmas baking. I made my mom’s famous peanut butter balls (click here for the recipe) and mini red velvet cupcakes with cream cheese icing.
I must tell you about two of the AWESOME presents I got from my AMAZING boyfriend. He definitely knows the key to my heart.
This is the one thing I have been wanting to get for a while now and he hit it dead on! I only wanted the 9-cup one and he got the 12. I haven’t got a chance to use it yet as we had to leave the next day. I already have plans to use this new ‘love of my life’ when I arrive at home in 7 days.
This is something no girl should ever complain about. He got me one for my birthday too. There’s nothing better than spending a day in relaxation while getting pampered. I’m also going to use this in the next couple weeks too. I think it may have been a plan to get rid of me while he goes snowmobiling with the boys – I’m not complaining! I was definitely spoiled this year. I would’ve been happy spending time with friends and family, but again – I’m not complaining.
Well that’s all for today. I better make some time for homework. I didn’t even attempt to open my books over the holidays. Wishing you all the luck in the New Year and I hope you achieve all the goals you set out. I can’t wait to tell you about mine for 2013 in my next post!
