Official Homeowners and Good Buys

Hey everyone! Well, it’s official, Josh and I are homeowners. The closing date was May 30. After many appointments last week and getting more and more bills to pay, it’s finally ours. I can’t believe how much everything costs these days – there’s insurance for everything and it isn’t cheap! Now we’re looking at paint colours and all the different renovations we want to complete. The kitchen is going to be our biggest expense as we are completely redesigning it. It’s an older house, so we’re hoping to fix it up and sell it for more in a few years. I just can’t wait to get started on everything. It feels good to not be paying rent and to be putting our money into an investment.

Today, Shelley (Josh’s mom) and I went to some garage sales and farmer’s markets. I used to tell my mom she was crazy buying used things when I was younger, but you can actually find some pretty cool stuff (well, sometimes). I hadn’t been to the markets here in Prince George yet, so I was excited to see what they have to offer. I have to say, although it’s not even comparable to what they are like in Vancouver, there is still quite a bit.

At the garage sales I bought a set of 6 wine glasses and a set of baking dishes.

At the farmer’s market I got a gluten-free banana cupcake with peanut butter icing and some raw local honey. I also got a loaf of gluten-free pumpernickel bread. I will be doing some posts on these local vendors in the near future as I think they deserve a mention because their products are delicious! I wanted to get a lot more such as some veggies and local meats, but I couldn’t decide on anything. I’m going to go next Saturday morning.

Also, this is not completely worth mentioning, but it’s driving me insane. We have an invasion of caterpillars here and it’s absolutely disgusting. The back of the house is covered in them, they are all over the grass, the fence, patio set and anything else in the backyard. I’m scared to go in and out of the house because they keep falling from everywhere. Josh is gone for 12 more days and I have to mow the lawn within the next couple days before it gets too long. I’m going to have to get all geared up in my rubber boots, rain suit, hood, gloves and glasses. I know I might be over exaggerating, but you have no idea how bad they are here. I feel like a prisoner in my own home!

What a Good Friday

Happy Good Friday. I’m off today which is nice, although, I was hoping to get called in for the extra pay. It’s absolutely beautiful outside today – Spring is finally here! I’m hoping to go for a walk and enjoy the gorgeous weather.

This weekend I’m house sitting for some family. They have a beautiful house close to downtown and she has everything I could possibly want/need in her kitchen. This morning I woke up and made myself a juice. I have a juicer at home, but it was nice to not have to bring it over here.

Last night I had been looking up some breakfast recipes. I came across a website that had a ton of gluten-free pancake recipes that looked delicious. I decided to make Banana Rice Flour Pancakes. They turned out great. I spread a little bit of coconut oil, with a drizzle of agave and then sprinkled them shredded coconut on top. I got the recipe from this site.

There is also an espresso machine here. I asked Josh if we could get one when we get home. I told him it would save us money as we get Starbucks every now and then (and you know how expensive that gets). Plus, I don’t drink a lot of dairy and I don’t like drinking soy. So, this morning I made myself and almond milk latte, and I’m enjoying it as I write this post!

Gluten-Free Lemon Cranberry Muffins


Hello! The weekend is approaching! Yay! I don`t know if it`s just me, but I think this week went by very quickly. I have been keeping myself very busy between cooking, blogging, school, work and spending time with friends, so I guess it`s no surprise.

It`s been sunny every day this week here in Vancouver and I`m loving every minute of it. Today the skies were blue and the sun was just beaming on me as I was walking downtown after work. In the evening I had the opportunity to have dinner with a friend. We had BBQ and it made me realize how much I love summer even more. The dinner included roasted yams, asparagus, and marinated and grilled salmon. Everything was cooked on the BBQ and tasted fantastic. Grilling is definitely one of my favourite cooking methods. It brings out so much flavour and you have so many options for ingredients and flavours that you can use. I look forward to sharing some of my favourite recipes with you in the near future.

It`s my first summer in Vancouver and there are so many things to look forward to doing. I can`t wait to go to the beach with the girls. Our school is really close to one, so you know what we will be doing after class! I`m also looking forward to building my blog and Mona Vie business more this summer. The girls are so motivating; we all have a vision of what we want and we`re determined to make it happen.

This is something I came across on one of my Facebook pages and I thought I would share it with you:

It`s easy to quit and give up on something or make an excuse why you can`t do something. Being successful is more than just saying it, you have to do it and really believe in what you are doing. You can dream the biggest dreams, but it`s the actions you take to make those dreams a reality that count. Quit saying you want to change and keep making the same decisions that keep you in the same place that you are already in. For things to change YOU have to change, take that next step so you can reach your dreams and make them a reality.

Here is a recipe for Gluten-Free Lemon Cranberry Muffins. I made these the other day for the first time and I can definitely say the recipe is a keeper. They are moist, not too sweet and very satisfying. I kept a few out and froze the rest so I can pull them out to bring in my lunch some time.

Gluten-Free Lemon Cranberry Muffins

1/3 cup coconut oil or earth balance (I did half and half)
1/3 cup sucanat or coconut sugar
Grated zest of a lemon
1 organic egg
Juice of half a lemon
1.5 cups gluten-free flour blend
¼ tsp. baking soda
¼ tsp. salt
¾ cup plain organic yogurt
½ cup fresh or frozen cranberries
  1. Preheat oven to 375 F.
  2. In large bowl, cream oil or earth balance, sugar and lemon zest together. Don`t over mix. Add eggs one at a time, mixing after each.
  3. Fold in lemon juice and yogurt.
  4. Combine all dry ingredients together. Carefully fold in half the dry mixture into the wet. Do the same with the second half. Fold in cranberries.
  5. Divide batter among greased muffin tins. Bake for 25-30 minutes, until golden or a toothpick comes out clean. I got 10 muffins from this recipe. The original recipe was doubled, but I split it in half.
