Come on Summer

I don’t know about the rest of Canada, but the weather here in Prince George hasn’t been too promising.. Yesterday morning I woke up to blue skies and sunshine. I thought it would have been at least a little warmer outside, but it was still sitting at 0 and didn’t get above 2 degrees all day. I want to be able to go for long walks, runs, wear shorts, sit outside and read and go on picnics. It even snowed last weekend!

Besides complaining about the weather, I’ve been doing a lot of cooking. I also ordered Meghan Telpner’s new book, Undiet. I made the granola recipe found in the book the day I got it. It turned out awesome! I had some last night with some goat’s yogurt. So far this book has been great and very interesting – it’s hard to put it down! I would especially recommend it to anyone that is looking to clean up their diet. Her story about overcoming her diagnosis of Crohn’s is very inspiring and motivating. It shows just how powerful food and a clear mind could be.




Besides that I’ve made Jamaican Jerked Chicken, which turned out good, but I want to perfect the recipe before I post it. I’ve made Gluten-free Chocolate Chip Cookies and I’ve also been eating a lot of colourful salads!

If you seen on Instagram, I also baked a cake. It’s a Red Velvet Cake with White Chocolate Cream Cheese Icing. It was at my boyfriend’s request, and I can tell you that there is nothing healthy about it. However, it turned out great and I happily enjoyed a piece. There is a bakery in Vancouver called Edible Flours that makes the most amazing gluten-free (as well as egg and soy-free) cakes and pastries. They make donuts there that are to die for too!


I enjoy decorating cakes, what can I say? Well that’s it for today. It’s beautiful again outside, so I’m going to take the dogs out for a walk. I definitely miss the 30+ degree weather in Jamaica!


90 Day Challenge and Trip to Jamaica

Happy Saturday! So, after 2 weeks of frustrating internet at work, 2 amazing weeks in Jamaica, and then another 2 frustrating weeks, I’m finally home! I’m working on getting a job here in Prince George (instead of working in the middle of nowhere), so I’ll have internet all the time. How can I build my blog without the internet?

Jamaica was amazing. The country is absolutely gorgeous – and most importantly, nice and warm! We did a lot of relaxing, indulged in their great cuisine, played beach volleyball and went on a few different adventures. Would I go back? Definitely. Some of the excursions we went on include: snorkeling, zip lining, a boat cruise, climbing up Dunn’s River Falls, some Jamaican bobsledding and a little tour off the tourist map. Again, I had no complaints about the food at our resort. Every meal was delicious, especially the jerked chicken (omg)! I brought home jerk spice and managed to ask one of the cooks about his secrets. My plan is to try and match their succulent, mouth-watering, spicy chicken dish.

I’m also starting my first 90 Day Challenge. Today is day 3! I’ve been going to the gym and eating healthy, but I want to push myself to get to my goal. My goal at the end of the 90 days is to:

–          Gain overall strength (specifically upper body and core)
–          Gain 5 lbs of lean muscle
–          Tone
–          Increase my energy
–          Increase my cardio
–          Be able to complete 30 successful pushups

I’m pretty pumped! With all of the working out I’ve been doing (even before the challenge), I feel like I have a metabolism of a teenager again – I’m hungry alllllll the time. I eat small meals throughout the day and get enough protein and other nutrients. I just finished Sports Nutrition with school, so I was able to calculate the number of calories, protein, carbohydrates and fat I need for my level of activity.

Cooking List and Sandy Beaches


Hello everyone! I’ve made it home after a long 17 days of working. I was sick like a dog in the last 3 days of work. It was awful! We had to stay a few extra days, so I worked my butt through it since it was overtime. I can’t wait to own my own business some day where I don’t have to force myself to suffer. That way, I can snuggle up on the couch with some tea and chicken noodle soup, while blogging and working from home. Josh is sick now, and I tell you, men are babies when their sick. It’s like that NyQuil commercial, “Can you call my mom.” Hopefully he doesn’t read this post!

Yesterday we went over to his sisters for dinner. They made homemade salad rolls which are definitely one of my favourites. They’re simple, healthy and delicious. Kori has changed so much, especially in the 17 days we’ve been gone. She’s smiling and very alert now.

Today is grocery shopping day. The first 2 days we’ve been home we were invited for dinner, so I haven’t had to cook yet. My Cuisinart Food Processor is waiting for me! My mom sent me a recipe for this Curry Vegetable Barley Soup from Canadian Living that sounds delicious. I just might have to try it!

Besides the soup, some of the things on my ‘to-cook’ list are: bliss balls, granola, homemade protein bars, gravlax (with the salmon we caught of course),  slow cooker roast with root veggies, quinoa salad (because it’s nutritious and delicious), almond butter and hummus.

We’re going somewhere warm next month! We’ll be booking it in the next couple days as we can’t make a decision on where to go. First we were going to go to Mexico, but now we’re leaning towards Dominican or Jamaica. Where would you recommend? Neither of us have been anywhere warm before, so we’re beyond excited! Goodbye snow and hello sandy beaches! We’re excited to do some para-sailing, snorkeling, quading on the beaches, deep sea fishing and exploring.

Well, my stomach is starting to make angry noises at me, so I better get going. I’m making veggie omelettes for breakfast this morning. I’ll keep you updated on how my cooking list is going. I have a feeling I’ll be making some chicken soup for my poor sick boyfriend.  Hope you have a wonderful Monday!
